Dry soy is the soy that is harvested dry. This is the soy that most of us know. This soy is mainly known from animal feed. But dry soy is also widely used for human consumption, such as soy drinks, soy sauce, tofu and meat substitutes.

The fresh soy is so called because they are harvested when they are still green and not yet matured. The fresh soy is harvested both in the pod (Edamame) and from the pod (Mukimame).
